Ingredients

  • 2 lbs Chicken breasts
  • 4 oz goat cheese
  • 1/2 cup Sun Dried Tomatoes
  • 1/2 cup chicken broth
  • 3 tbsp minced garlic
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 2 tbsp red pepper flakes

Instructions

  • Preheat the oven to 375°.

  • Season the chicken breasts and place them on a cast iron skillet over medium heat.

  • Sear the chicken on both sides for 5 minutes.

  • Remove from the heat and then place olive oil and minced garlic in the pan.

  • Cook until fragrant and then add in the seasoning, sun dried tomatoes, chicken broth and goat cheese.

  • Stir until all is melted together and then add back in the chicken and cover with the mixture.

  • Place the skillet in the oven and set a timer for 20 minutes.

  • Remove the chicken from the oven to cool for 10 minutes and then place into meal prep containers!

  • I added in a 1/2 cup of white rice to go with this but you can also choose to eat it without!
